Baked Soak 4tbsp of raisins in orange juice for 30 min. Core four apples and pack into a baking dish. Mix the raisins with 4tbsp of honey and a pinch of allspice and spoon inside each apple. Cover with foil and bake for about 40 min at 180C/gas 4, until soft.

Caramelised, with pork Core and slice four eating apples. Season four pork chops and sauté. In another pan heat 3tbsp of butter, add the apples and 1tbsp of brown sugar, and cook until soft.

Apple and blackberry crumble Peel, core and slice four apples and arrange in an ovenproof dish, scatter with 250g blackberries and add brown sugar to taste. Rub 100g unsalted butter into 175g plain flour, mix in 75g caster sugar and 75g crushed almonds, spoon over fruit and bake at 190C/ gas 5 for 35 min, until golden.

Apple sauce Peel, core and dice 450g apples and put into a pan with 25g sugar, juice of half a lemon and 4 tbsp water. Cover and cook over a low heat until soft. Whisk with a knob of butter until smooth.

Quick apple tart Roll a packet of puff pastry into a rectangle and lay on a baking tray. Peel, core and thinly slice five eating apples. Spread pastry with some apple sauce (above), arrange sliced apple on top, dot with butter and sprinkle with sugar. Bake at 220C/ gas 7 for about 20 min, until the apples are tender and the pastry golden and crisp.
